You underestimate the syndicate's influence. Sure they could run in, issue threats until they get what they want or wipe out the place if they don't. Then instead of having someone who was only in the Empire's pockets they get someone who will be loyal to the Empire picking up where Jabba left off and a populace who thinks the rebels are worse than the Empire. It's the same reason why the US military doesn't just just knock over a mafia lord's house to stop their operation. You have to remember, the whole plan was to strike a deal first with Jabba to let him keep his power base while getting Han back. It just didn't work and they had to fight for their lives. As for the whole Bobba Fett nonsense, that was fan fiction trying to claim that he's too "badass" to be killed that way.
