i am asking this out of curiosity to see what seems to be the normal/average amount of time before the game it crashes/freezes for people and what system was it for
if it cashes/freezes for you

for me it was a day two ago freezing at some were between 1-25 minuets from when i load the game
some may call that unplayable but i call it very annoying and an immersion killer
but that was being caused by mods(obviously my system is the pc)

to add to it for some reason many the place i discovered in big mt(old wold blues) got undiscovered. and a few days ago i was playing honest hearts and the places i discovered disappeared from the map. then deleted the all save files that i made after starting honest hearts(i was not that far).
i deleted my data folder and replaced it with a clean one. then re-installed most of the mods again

but before all that in never froze but crashes some time after i play for more then a few hours
in other words it was decently stable or defiantly more stable then fallout 3 unmoded(that crashes on the load screen when i try to start a new game) yes i have a windows 7 64bit
i also was basically using the same mods at the time

edit
my game i very stable on my new character i just made while on my last one were i was past level 40 it froze allot the past few days

edit:8/21-1012
it was freeze on a loading screen when i tried to fast travel to goodspings yesterday
i also uninstalled project navada dlc patch and re-installed were it was recommended FOMM(fallout mod manager)
some time after that i fast traveled to a area near goodspings and it did not Freeze
and it still crashes if i play for two long
byonde that it very stable

Not at all actually, and this was about a couple days after launch.
Same with Skyrim though there were some textures issues on launch for me.
Fallout 3 i got a month after launch, worked fine too except for this one quest that i wasn't sure i couldn't figure out, or if it was just completely bugged.

Soo yeah, awks...

Ah i should mention, Fallout 3 and New vegas are on the PS3 for me. Skyrim on the PC.

I did have an odd loading screen that lasted 3 minutes once in New Vegas when i went into a shack and it happened again when i left that shack. everywhere else was fine, it was just that Time distorting shack o_O

Once and only once. This was in the first hour of the game, and since then, over multiple playthroughs its never happened again

Unmodded, pretty much never crashes for me. With mods... actually I think it was pretty stable with the mods I was using, too. I haven't played it in a while, though, so I don't remember for sure.

I've got the 360 version and my copy has never crashed. It's frozen a couple of times but that's probably due to me playing it for too long in one sitting.

Reckon it's crashing or freezing on loading screen atleast every 30 minutes.
Got about 30 mods installed, but Fallout 3 barely crashed on me - and I probably had a hundred mods installed on that.

Fallout 3 crashed every 30-40 minutes. F:NV was almost without crashes, but then I downloaded the addons and the freezes were back.

Anyway, I have long ago accepted those as a part of the Fallout experience. Also, I save every 3 minutes.

I had one lock up on a door transition and that was it for my whole 3-4 playthroughs. Skyrim on the other hand :/ ick.

I've played it on the PC for 3 hours and it has crashed once so far.

Not a lot usually, but there's 50/50 chance of it crashing when fast-travelling in Honest Hearts or Old World Blues

I played the PC version with a Nvidia card at launch at had serious issues, I actually had to resort to a community mod fix until it was patched it was that bad for me. My quicksave key got a serious workout that weekend haha.

It's is fine now though, is even very stable with a whole stack of mods as well.

The first two times I installed it it was prone to crashing every few hours.

The third time I installed it was smoother than silk from beginning to end.

Fourth time when I was playing all the DLC, it was just as smooth.

Shortest time was 5 hours, but I have a massive overhaul mod that helps smooth out the game engine and the various defects that the game has.

Never, the game is much more stable than anything Bethesda has ever made.
