Battlefield 3 on PC, but not if you want a singleplayer game. It is only good as a class based team shooter with vehicles. Will be the best online multiplayer game until either the next BF game or Planetside 2.

Deus Ex: Human Resources on PC (you can remap the controls which seemed to be a sticking point for some).

Skyrim on PC (I guess, everyone seems to be raving about it, but you will need a PC to fix the problems it will inevitably have.

Skyrim- Because, well... let's face it... IT'S FUCKING SKYRIM.

Dark Souls- Yet another game that you can sink 100-150hours into... most economical

MGS- Because, the MGS series will always have a warm and fuzzy place in my heart also, it's a 3 for 1 deal ... again, most bang for your buck
...
The other games up there are good choices too... I'm just thinking that if you're wanting to narrow it down to three then you're doing so because of economic reasons... and I just want you to get the most enjoyment for your money.
Also, DE:HR... was the other one on the list that I have played BUT it's not... that... good. I mean, it was 'okay' but nothing to write home about.

inFAMOUS 2
The Elder Scrolls V: Skyrim
Saints Row the Third
Dark Souls

I picked four. So sue me.

The first two are because I've played them and I fecking love them. I picked Saints because I watched a bit of gameplay from my friend and the Internet, and it looks fun. Dark Souls is there on the assumption and gathered knowledge that it's brilliant just like its predecessor.

If I had to omit one for the sake of keeping it to three games, I'd take Saints out of the mix.

I only played one of the games off of this list and that is Skyrim. Which I recommend you buy.

Although I have played the original versions of all the games in the MGS HD collection, so I'd recommend you buy that as well.

Skyrim, Battlefield 3 and Dark Souls. All fantastic for very different reasons. Deus Ex, MGS HD and Dead Space 2 are all in a weird 3-way tie for fourth. Haven't played any of the others, though that seems to be a generally high quality list of games.

Skyrim

Dark Souls (if your mind and body are ready for it)

MGS HD if you haven't played the component games, if you've played all of them, skip it, if you've played some but not all, it's sort of a tossup between it, Deus Ex, and SR3

Dark Souls

Skyrim

Infamous 2
These are also my recommendations. I have Dark Souls (and between various builds have sunk several hundred hours into it), my friend is borrowing InFamous 2, but it is a vast improvement over the excellent Infamous, and I'm getting Skyrim in a few days, and I am quite hopeful for it.
Yeah, Dark Souls is my game of the year, deepest thing I've played in, well, ever.

Skyrim is wonderful if you don't get hung up on bugs, I'll probably be playing it long after I'm done with the other ones.

And I don't have a PS3 but I have played all the games from my favorite developers from the PS2 era. and Naughty Dog and Insomniac have both taken a fall from grace. Jak and Daxter and Ratchet and Clank are 2 of my favorite series of all times, I've always liked Sly Cooper but it never quite measured up. In the PS3 days Uncharted kinda sucks and Resistance isn't better than Half Life. While the Infamous games are masterpieces in their own right. Well done Sucker Punch.

Battlefield 3 - Unmatched replay value in multiplayer. Still love it after playing 2 hours a day since launch.

Saints Row the Third - Plenty of things to do helps up the replay value, as well as the co-op. Plus, it is just fun.

MGS HD Collection OR Skyrim - Can never go wrong with MGS, especially when it gives gamers the chance to play one of the PSP titles. Alternatively, you can buy Skyrim. I, however, found myself really bored after about 15 hours.
what do you mean unmatched replay value? it' always the same fricking game. Shoot bullets at person. can't do much variation on the concept I'm afraid. still its not a bad game i have to admit.

as for this pick 3,

Deus Ex: Human Revolution, some good story telling. fluid mechanics.

Skyrim: Need i say more?

Infamous 2: this game is a sandbox which is well designed. and it's awesome.
