I think I read something years back about George wanting to do 3 trilogies, but decided to do 2 instead. But really, there's no need for another trilogy.

Sure, it was, but you don't have to focus on Leia and Han's children, nor must there be any attention paid to any lineage from the original or second trilogies. Granted, with Jedi and Sith, you may have to touch on past history, he could focus on a completely different storyline. I more or less agree. He's got ideas, but he's to busy trying to stuff his stories with as much as can at the cost of interesting dialogue and plot. They don't have to be amazing, George.
