Oh yeah, I forgot about that guy. I actually enjoy fighting him, he's a pretty decent challenge in that game. I never thought to use the Pocket Plane anytime except when out of battle. As for boss battles done right, I still think the final battle of Shadows of Amn is a very good example. The penultimate battle against Irenicus, in Suldanessellar, was actually much harder, I thought, but the final one just feels much more epic. It's you against four demons and Irenicus, who has transformed into the Slayer. He tends not to use spells much, which is why it's easier, but the way the fight is arranged makes it feel like the epic battle a final boss should be, without being frustratingly difficult.

Irenicus in Suldanessellar is a terrible fight. He's just too powerful. Even when out of every other spell he gets rapid fire magic missiles which can kill you in seconds. The only way I could ever take him was to draw out his Death Spells and then summon Nishruu or Hakeshar and let them handle most of the job, running in at the end with a spellshield and mincing him quickly. The final battle, as you say, is far better, possibly due to magic playing a smaller part.
I think the best battle was the one in ToB against Yaga Shura. It's not just all your party piling onto 1 ridiculously powerful character as Yaga has a whole load of friends. So the fight requires more tactics and micromanagement. Especially since Yaga himself is no pushover and heals like a little girl.
What do you think of the final battle in NWN2 against the King of Shadows? I always thought that was a good example because, agaiin, it feels very epic. Also good to look at: one thing that engine did well (possible the only thing) was to have great spell effects. So in a fight like that, with all your companions running around (those left) throwing out spells where possible, the end results looks nicely fantastical.

Spells like Breach and Ruby Ray always seemed to bug out occasionally on the bigger fights. So I'd throw it at Irenicus, charge in , and nothing would happen. The fucker would just wipe me out. And Spelltrap wasn't involved - I know to check for that weasly bastard. But yes, he is still extremely powerful, and it did tend to result in the death of one of my party members (I think it was Aerie the first time I fought him).
I thought the Yaga Shura fight was pretty good. To be honest, I mostly just ignored his army and had my party hit him with everything they had until he died. He runs away at one point, so obviously I fought the army then, but when I was actually able to attack him I was normally able to hit him so quickly for so much damage that he didn't get a chance to heal. Ah, 10th level mage spells. I'm not sure what the best fight in ToB was, to be honest. Possibly the three fights before you can open the final seal in Watcher's Keep; against a group of undead clerics of Helm, then against a lich and some flaming skulls, and then against a load of powerful demons. Watcher's Keep was the best part of the expansion by far, in my opinion; the main campaign was good, but it didn't compare to Shadows of Amn.

I've not played either of the Icewind Dale games, but now that they're on GOG that may well change. Ever play Icewind Dale 2? That also had quite a touch boss fight because there were multiple enemies (and you couldn't ignore some of them).

With Draconis you need to remember that when he is a mage, he has the weaknesses of a mage. That is, Bibgy spells completely fuck him right up. Hit him with one of them and you can just wail on him. The lack of side quests in ToB bothered me a bit as well. The story was decent, but there wasn't enough to it for it to stand up as a full game, although it worked as an expansion. It seemed to me that Watcher's Keep was just as much the focus of the expansion pack as the actual campaign was; like how, in Oblivion, the various guild questlines are just as detailed as the main quest. The Keep was easily the best dungeon in the series, and probably the best dungeon I've played in any game. The teleport maze could get a little annoying, although the Wild Magic rooms were great fun; at one point, a spell resulted in a cow dropping out of the sky and onto one of my characters. I did really like the Spirit Warrior sequence on the last level, mostly because it plays like a text adventure.
Just to put things in perspective, remember the dragon on the bottom level of the keep? My party (and various summons, including a Planetar) obliterated him in under 10 seconds. And we still couldn't kill fucking Draconis.
