Tofu is difficult, unless cooked properly: Consider looking for Tempeh. It is delicious and harder to screw up. Also, a good start would be various Vegetarian (Blank), like Morningstar Farms. I'm not vegetarian, and I eat them just because there delicious, though somewhat expensive.

Another thing to do is based on the assumption that you saw some factory farm video or something similar which turned you off of meat. If that's the case, then remember there is alternatives. Get free range stuff, for example, or maybe there's a few hunters or fishermen in your family. Also, there's milk and cheese from local family farms, not to mention free range eggs (You can be a vegetarian who eats eggs. Just forgo actual meat.) Friend of mines fiancee doesn't eat any normal meat, but does eat meat that she knows was obtained without unnecessary cruelty. You could very well simply cut back on the meat, sticking with non factory farm stuff, which really is probably a good health idea anyways.

but then your not giving up meat to be healthy, so just find all the cliche meat replacements you can

or take the uber challenge and eat only celery

Humans need nutrients like protein, fat, calcium etc. These are easily attained from alternative sources or pills.

As long as you vary your meals you can get by as a vegetarian. It's reallyh no challenge. I know because my aunt's family are actually vegans, and she makes great food.

You have to go out of your way to supplement, or you're going to have deficiencies in your diet - there are some things you simply cannot get from an exclusively vegetarian diet (or not nearly enough of it if you can). I would seriously recommend looking just about anywhere other than a gaming forum for those sorts of details, expecting to find expert advice on nutrition from us strikes me as rather akin to panning for gold in your own shower in terms of unwarranted optimism.

This is what my family does a lot of the time. They do serve as a good way of getting into vegetarian food and you can usually mix them in with various vegetables to make some quite tasty dishes. Quorn is usually a good one to start off with, as it isn't as much of a pain in the ass to cook as Tofu and you can get lots of variations it which work well as meat replacements (the chunk type usually tastes like chicken). EDIT: Forgot to say this, don't expect it to taste like meat. Quorn products don't and the brands that usually try to taste like meat don't taste like meat. At all.

From there you can just try different things and see how it works out. Get a vegetarian cook book and just see what there is that you would like to try and make at some point. Also try to think carefully about what extent of a vegetarian you would like to become. Some vegetarians eat fish, some will eat gellatine (though you can get vegetarian alternatives) and some will eat dairy products like eggs, cheese and milk. Think about that before deciding to give up eating all animals.

I am curious as to what caused the change, though I won't pry.

I was vegetarian for a while simply to lower my calorie intake.

Allow yourself some variety for one.

Stir-fry steam veggies one night, bean and cheese burritos another night, Ceasar salad the next night, etc.

Stock up on cheese and spices. Meat adds a ton of flavor to food and you will want to compensate for that. I would recommend johnny's seasoning, cayenne pepper, old bay, black pepper, and chipolte.

Careful with veggie foods that try to be meat (e.g. veggie burgers.) They do not taste like meat, and if you expect them to, you will only suffer disappointment.
