What animals has Pokemon not done?

I don't know Pokemon inside an out, though I do have good general knowledge. These are all assumptions:

Koala
Panda
Sunfish (the kind with both eyes on one side of their head)
Pig
Sea Cucumber
Tasmanian Devil
Hippo
Pangolin (they're freaky, look it up)
Stingray/manta ray/bat ray
Sloth
Tarsier
Hedgehog

What? No. Octillery is an octopus and tentacruel is a jellyfish. The last one isn't even in the cephalopod class so I have no clue why you would mention it.
omanyte and omastar from generation 1 should cover that then

red pandas have been done - don't know if snorlax is a panda though
sunfish has been done, can't remember the name but it's in Black and White
pig is used for the fire starter in black and white
hippo has been done
the closest to pangolin would be sandslash
manta ray has been done in gold and silver
sloths have been covered in ruby and sapphire
the cloest I can think of to a tarsier would be aipom from gold and silver

And if we get into prehistoric animals. That's a long list I could have some fun with. Dilapasaurus (with InGen added poison spitting action for shits and giggles). Anything from the raptor family. I know they did something off Archyterypx (spelling is way off) but nothing more Deinonychus or Velociraptor-like.

Hm... further research shows that there isn't even a T-Rex or a Triceratops Pokemon yet. The fuck is taking them so long? We got to prehistoric plants before the two big hitters? Where the fuck are the priorities here?

Would Catgirls be considered animals or people?
If there is going to be a 6th generation, and we all know its only a matter of time until Nintendo reaches far enough up its own ass to make it, I got my bet on a Catgirl pokemon.

Raptor / Falcon = Staraptor (unless you meant the dinosaur one?)

One animal they should definitely do is the T-Rex... EDIT: oh wait, my favourite 2nd gen pokemon is a T-Rex :) Silly me...

The closest thing to a Gorilla I can see is Darmanitan, but I don't know all the various species of Ape, so it could be based off something else.

As for Anteater, Gen 5 gave us one: Heatmor

Well they're ammonites, which are quite different from the modern nautilus, but yeah I guess they sort of count. Visually they're pretty similar. What on earth are you talking about? Octillery and Tentacruel look nothing like a squid. Octillery is obviously an octopus and tentacruel is litterally called the "jellyfish pokemon". I have no clue what point you're trying to make. There is no squid Pokemon, and there aren't any Pokemon that look like a squid either.

Manticores, Hydras (Hydreigon was more a clone of Ghidorah), I would love to see some sort of Scarab. Maybe some form of hornet, god knows asia has some badass hornets. Some sort of millipede. Not to mention all the Dinosaurs they have to choose from. Somebody made a fake Hammerheadshark Pokemon back when gold & silver came out, might I suggest stealing the concept? Perhaps a water/poison sea-snake?
