One of the defining characters for spiders is that they have 8 legs. Spinarak has 6. Also the eyes and mouth parts are wrong, though that might be Nintendo not wanting a horror movie Pokemon.
Mongoose is covered by Zangoose.
true, but it spins webs, that kinda sells it, and it's evolved form has a very spider like posture.

Net is not a defining character. Also Weedle and Catterpie also got net.

Pile of garbage is not an animal, but Grimer, Muk and Garbodor covers that.

Well...technically, yes you're right. However, it's close enough to where Rampardos covers it anyway. I mean, admit or not, that's still the same basic body structure as a T-Rex.

As for Sudowoodo, I said "my best guess"
I know he looks nothing like a stick insect, but I can't imagine them making an actual stick insect. Sudowoodo is probably the closest they'll make.

They don't have scythe hands, they capture prey under claws, but they can fly witch I just learned. The body is nothing a like though, that's the unique pray mantis bit it misses.

Actually, Hitmonlee is based off Bruce Lee. Otherwise it'd probably be Hitmonli. Since that's how you spell Jet's last name.

EDIT: Actually it's a loach, my mistake. I was thinking of Whiscash, it's evolved form.

Then I direct your attention to this.
If you are too lazy to go to it, it lists Scyther as "The Mantis" Pokemon.
Under physiology, it says:
