Weirdly, despite never having actually seen the anime (which I think is a bit on the obscure side anyway) and not having heard the music in about 10 years, the theme to MAPS still gets stuck in my head on a great many occasions. Can't figure out why.

I love the theme songs for both Cowboy Bebop and Samurai Champloo, but considering both anime were based off jazz, blues and rap, hip-hop respectively, I think they were kind of expected to have good soundtracks.

Couldn't agree more. Surprised Beyblade didn't get mentioned earlier, it's awesome. But yeah, hands down, Pokémon in English got to be the very best.

Definitely "Tank" from Cowboy Bebop - my favorite soundtrack of all time.

A close second would have to go to Ping Pong Club
And the show is hilarious.

Hellsing had a pretty badass theme song too.

Seriously! DBZ OVER Classic Dragonball?! That song never bored me. ARGH! It's in my head again! That will take month to get out!

Hokuto no Ken aside, there are many catchy themes like the one for Love Hina (which has burrowed into my brain like a botfly), Deathnote (I don't really like Maximum the Hormone but they have a couple songs I love), Detroit Metal City (Satsugai = Metal [well, it means Murder but it's so freaking awesome!]), Cowboy Bebop and, many others.

I can't commit to just one so I'll enter all-of-the-above.

Are you referring to that shit during the middle of the second season? Nothing has ever made me rage so much watching animation than that particular waste of animation.
NGE's got it for me. Just because it's so disconnected with the feel of the series.
HOTD is a good runner up and it DOES fit with the series.
