I guess sometimes it's because people have made plans with other people to watch the movie that they can't get out of? Like making plans with your bros to watch it but your girlfriend randomly suggests the week before that she wants to watch it and you have no choice.

Don't think I've seen anything in theatres more than once but I'll rewatch stuff at home all the time. I'm sure I've seen The Godfather parts I & II at least 6 times each. Ditto Jaws, The Avengers and Jurassic Park.
In the case of the Godfather, there is subtle stuff you miss that makes a rewatch worth it. For the other films I mentioned, they're just so much fun.
Also, lets be honest, is there a poster here who has not seen the original Star Wars more than once?
