Since I got the Kyne's Peace shout, I don't kill wild animals. I just shout at them and everything is fine.
You know when climbing the 7000 steps to High Hrothgar there are those 10 thingamajigs you can read about the Voice? Well, read them and you get an active effect that makes animals not run away from you, or attack you as far as I know. And I think it's permenent as long as you don't kill any animals.

OT: Walking. If he isn't following someone that is running or if he isn't in a fight, he is walking. Perhaps not so much a quirk as, umm, something else, but meh.

My character never sells gems and unenchanted rings. It's just, this game has turned me into a hoarding magpie.
Same here I dump them all into the cauldrons and chests inside the thieves guild vault.

It's official my Argonian hates horses. He keeps Unrelenting Shouting them off the throat of the world. They deserve it for being equine scum.

edit: Also I burn my victims bodies after I kill them less evidence that way.

Whenever I see a lone bandit, or a lone anything at all, I just have to mess with it. I usually sneak up on it, get as close as possible, and use a full power fear shout right in its ear. Or if it's asleep, I unrelenting force it awake and watch it fly. I also have this thing where I must have the absolute minimum in my inventory, unless there's something in it I want to sell. I also have a habit of pickpocketing back the money I just spent on training from the trainer. What? Don't look at me like that. I am NOT greedy.

My character refuses to have skin shown in his armor aside from hands and head. (And tail, he is an Argonian, that said, I don't wear gloves or a helmet)

I pick up every skull I come across (not troll skulls) to keep in a pile in a corner of Breezehome.

Major spoilers alert:
I also completed the Dark Brotherhood quest chain to assassinate you-know-who, despite having sided with the Imperial Legion. My character isn't sure what to make of that!

And I have to have one set of each armour, weapon and unique items I come across, unenchanted, even if I have an upgraded, enchanted version already.

My character only does what benefits him. He uses treasure hunters to get him to the treasure, they promise to share it equally, then he stabs them in the back and takes it all. He doesn't care for other people if they don't have anything for him. He's an ass.

My Bosmer collects baskets.

There's more than three hundred just on the floor of Breezehome.

Some might consider a Dunmer wearing woad warpaint to be a fanatical warrior. In reality, he's an amateur thief. Emphasis on "amateur," due to him carrying around the book of Shadowmarks.

Apparently the rest of the Guild is aware of his low knowledge of the trade, as he's been asked by Vex to clean out all the valuables from the house of Clan Battle-Born. Our allies in Whiterun.

Oh, and he is determined to get good enough at archery to take down a deer with one shot. Since they don't stick around long enough for him to line up a second.

My assassin has a modus operandi. Every single person he kills he steals the shoes from. I've taken to calling myself "The Barefoot Murderer". The butcher of windhelm be damned, I'm a much better serial killer.

My character is a Wood Elf rouge-style character; his quirk is that he jumps all the time when in combat, and he wears/uses at least 1 item from every guild he has joined.

Also he goes into town and bankrupts all the vendors by selling all the crap he's picked up until they have no more funds.

There are only a few things that my character won't steal, being a huge kleptomaniac. His entire house is full of baubles and shiny trinkets, but he'd never steal from holy sites.

He's a killer, too, but doesn't do that without good reason. Usually "I need to get past you to get the treasure of this dungeon" is reason enough, though. Picking a fight with him would probably result in him beating you up, but if he has to kill someone then he has to do it with his own two hands - he won't kill people with spells. Except for the fact that he often charges into battle wreathed in flames from his friendly-fire fireball.

He's pretty much quite the honorable guy, save for the whole "deadly thief who takes what he wants when he wants it" thing. He's pretty much a vigilante for everyone except himself.

He also has the notable habit of always wandering alone without a horse or any companions, largely due to the accidental assassination of his last co-thief.
He tends to keep spare weapons "inside" cauldrons, rather than inside proper chests. It looks cool, even if it does make trying to pick and choose spare weapons (And I have a lot of spare weapons) a pain. Sometimes the swords/axes/daggers/brooms fall out and I spend ages trying to rearrange it how it was. :(

My character, as is characteristic[footnote]Hurr hurr characteristic[/footnote] of Dark Brotherhood members, likes to stab people.

She will stab anyone and everyone she meets, if she thinks she can get away with it.

Especially Thalmor, fucking elves ruining any dreams of feeling the warm sands of Eleswyr again.

My character does all sorts of depraved, evil stuff - Like, he's both guildmaster of the Theives Guild and he ...To say it unspoiler-ly for you guys: He sided with Namria in her quest (people who have seen that quest will KNOW what I'm talking about) ...But he doesn't otherwise murder people, and when Mehrunes Dagon gave me an offer to kill someone for his Razor, I told him to go fuck himself, for all the shit he put my old lost relative (Obliv Char) through.
