Luckily in todays market, more have stepped up to provide more options. Eventually those that refuse to do so will be left behind as more competition makes it " standard" to do so and it becomes a feature players expect to see.
Also, you're using ESO, yet another game that's been a gigantic disappointment for a huge amount of people despite the customization that's praised. Which goes back to a point I was making with Er or Burned or someone else, there's not enough of a market or the options are not in games with solid enough mechanics that are also interesting to sustain themselves. ESO went from sub, to buy to play, to free to play, in about the space of a month...

Most of the big MMOs don't need to focus on graphics or models considering most of the time you're not looking at your character, you're looking at pretty much everything but, damage percentages, timers, cooldowns, positioning, etc.. Most games have standard models for each race you're allowed, and with stats and faction starts becoming a thing of the past, it becomes less "why no sliders" and more "y u no pick this race" if you want a certain body type. And even then, most of the armor and weapons have the standard look so that your character model honestly looks like everyone else's. Which is why I applaud EQ2's appearance equipment section, so you can keep wearing the shitty gear you get at level 1 if you like the look of it.
EDIT: Also people care a great deal what their character looks like.. they know everyone else sees it.
