Pretty much every game I've ever played.

With the exception of I suppose UT2004. Owning godlikes is easy.

I had to turn down the difficulty of Red Faction: Guerrilla for the last level. I had done that damn uphill tank battle close to ten times, and finally swallowed my pride, kicked it back to easy, and breezed through it.

Mortal Kombat...

I just really suck at it but still play it all the time, and Shao Kahn can still kick my sorry ass around the arena on beginner difficulty.

Demon's Souls is a prime example of why every videogame should have multiple difficulty modes.
Demon's Souls does have multiple difficulties, it gets harder and harder with each subsiquent playthrough, until after beating the game for the 7th time.. Then it stays the same.. So technically, your first playthrough is Easy Mode.

OT: To this day, the only game I had ever had to turn down the difficulty was: Devil May Cry 1.

Left 4 Dead 2 I wanted the achievements for completing the campaigns but for a while I held onto the belief that me and my friends would play through them on Normal online, but eventually after the fifth month of saying "Yeah just a soon as we're all on at once, and in the mood to play L4D and not CoD or something" I just gave up and played through all 4 on Easy with bots. Also I used to always play Age of Mythology on easy because I too enjoy RTSes despite sucking at them. I've tried to challenge myself to play AoE 3 on Moderate and I usually get my ass handed to me in it.

Most games I play on normal, but I definitely had to play STALKER on easy - and it still kicked my ass! One day I will finish it... one day.

Marvel vs. Capcom 3. After I beat Arcade Mode on normal twice I realized you can get a character's title on ANY difficulty, so why not just rush through on Very Easy? I haven't decided if I want to get any of the Very Hard titles yet.

I'm in full agreement with the above.

I've played three games on easy:
Dragon Age 2- Because the combat on hard wasn't 'hard', just tedious and too long.
Witcher 2- Pretty obvious why. Though I've beaten it on normal, too.
Minecraft- Fucking creepers!!

Because if i hadn't put the difficulty down I probably wouldn't even have gotten out of vault 101. All the enimies in that game are freakin tough

B-b-b-but! Easy is waaay too easy! Normal mode is fine!...though I can see why you just want to play it for the story :D

I admit to selecting easy mode on my first playthrough of MGS3. After that though, I cranked it up to difficult to see how well I did.

Bioshock, because I wasn't used to PC FPS, and I have a low "creepy" tolerance. I look back on some of the scary bits on YouTube from time to time and think to myself, "How did I not wet myself when I played this??"
I keep seeing Bioshock crop up in here. The thing with turning down the difficulty in Bioshock is you never learn the most important mechanical lesson the game teaces you: Electric Buck = I win. Always. I couldn't agree more about the creep factor though. I'm hoping they tone that down a bit with Infinite.

I always play every game on default difficulty. Not because I'm that good, but because it really increases the length of the game and it's replay value. (Truly great games I will replay on hard.)

Every FPS game out there...I'm seldom good enough to beat them on normal difficulty.

Games like God of War/Devil May Cry/Uncharted I tend to play on easy as I have more fun experiencing the story and cinematics than I do the actual gameplay.

Nope, I play none of 'em on easy. I always play on normal. It seems like the best of both worlds. You're not so unchallengened that the game might as well be a movie, but you don't have to have to reaction time of a paranoid neurotic to finish the game. That way you get to let the enviroment or aesthetics sink in a bit more.
In fact, I go as far to say that all games should have just one difficulty and if you can't take that or get bored at that difficulty, then the game just isn't for you. I mean, you don't get movies which have the option to cut out some depth or novels in which you can set the amount of characters involved. No, you just pick a different movie or novel.
