I would say that if you're going out, then she should know you well enough that you can't suddenly surprise her with something new and cute

You could just do what I do. Be yourself, stop trying to entertain her, if you have to work to entertain the girl your with and she doesn't simply find you cool at base personality, its not going to work out very long anyway. It sounds harsh to say but over the years my relationships always pan out that way, as do the one's of my friends. If she's happy with you already just continue to date her, solidify the motion, make sure its mutual, or simply ask her what she likes most about you and be sure to exemplify that.
