xxxHolic, Kino's Journey (aka Kino no Tabi), Ramen Fighter Miki (aka Muteki Kanban Musume)
They're episodic so you don't have to wait for something to happen. Though Kino's Journey tries very hard to be "artsy" so it may take some getting used to.
And you shut your mouth, Gankutsuou is probably the best adaptation of the original novel that's ever been produced.
AHHHHHHHHHHHHHHHH, I can't believe I missed that one. Full Metal Panic is a solid series through and through. Once you are done with that (and Full Metal Panic: The Second Raid), you absolutely need to give Full Metal Panic: Fumoffu? a watch.
