Here is my list i enjoy animes with a deep plot

1.Ergo proxy
2.Darker than black
3.Death note
4.Cowboy Bebop (Because its a classic)
5.The Hellsing OVA Except they take 4 months per episode.

1. Hellsing (OVA)
May well be keeping the vampire genre alive, along with this Blood movie hopefully.
2. Dragonball/Z/GT
It may be ferpect but it is still a classic.
3. Fullmetal Alchemist
Hmm... I can't find any other way to describe this in one line other than "crazy awesome".
4. Case Closed
Law & Order meets Encylopedia Brown, is a hell of a lot better than it sounds.
5. Neon Genisis Evangellion
Is somehow anthropological.

RahXephon was great. I watched about six episodes... I should finish it. ^^

Yeah, RahXephon rules. It's my favorite anime ever. Definitely finish it. It has maybe one "filler" episode (they go to the beach), but even that ep has loads of character development. I think a lot of people wrote RahXephon off as an Evangelion clone. While the episode structure is very similar, the two couldn't be more different in most other respects.

I can also recommend Witch Hunter Robin. Sounds like you'd like it. Japanese X-Files, basically. But better than I make it sound. And the opening theme song is amazing.

I really don't see how you can call this a ripoff. Dream technology and pre-cog are to different plots dude. Replace one with the other and you've got very different results.
